Happy Tuesday! Will it ever get warm?? As I’m typing this, I’m looking out over the river that runs through my yard.. the sun is glistening, the landscapers are out mowing the lawn in the park, and tending to the baseball fields.. I opened the window, and the chill hit me right in the face! Ugh! I want warmer weather dammit! We are heading into Easter with temps in the 40!

Anyway, I cannot believe the amount of orders I’ve already received on my pre-packaged meals! Anyone who knows me, knows that I get “over the moon” excited to cook for people! And it’s a good thing I’m passionate about it, because the food business is manual labor! Among other things, Ina Garten was right.. invest in comfy shoes!

Last night I went to bed on the heating pad.. I felt 90! But true to form, I woke up this morning with a million new & exciting things to make & do, as it relates to “Peace of Paleo!”

So, a good friend of mine ordered a few meals from me.. I love these single guys that don’t cook! They’re my bread & butter.  If you live alone, don’t cook, & want to be healthy.. I’m the chef for you! Haha! Anyway, he’s been telling me about his cat, forever.. now most people think their dog or cat or kid for that matter, is the cutest, but this cat was legit.. the cutest cat I ever saw.

He greeted me at the door like a dog, had a tail that could only be compared to Tyson’s.. it was sooo long, it touched his head & if that isn’t cute enough.. he makes a fist to “flex” and bites when he wants to play. His name is Woody & I want to steal him! I was like, don’t pay me.. I’ll just leave with the cat! ?

I was there for 20 min & I left with 12 pics of Woody! The good news is, I’ve known Michael my whole life, so he already knows first hand, how nutty I am! So, it’s all good!

Anyhow, let me tell you that this frittata is to die for! When I first begin seeing recipes that incorporated smoked salmon into eggs, I wasn’t really anxious to give it a whirl, but I have to admit.. It’s a super yummy & healthy combination, so I highly recommend it.

Prep Time: 10 minutes

Cook Time: 55 minutes

Total Time: 1 hour, 5 minutes

Serving Size: 8 pieces

Smoked Salmon Frittata


  • 1 tablespoon ghee
  • 12 eggs
  • 1/2 cups coconut milk
  • 1/4 onion, diced
  • 1/2 lb smoked salmon, chopped
  • 6 ounces of goat cheese
  • 2 tablespoons dill weed
  • 1 teaspoon sea salt
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon fresh cracked pepper


  • Preheat the oven to 350 degrees. Saute the onion in the melted ghee over medium low heat until transcluent, about 5 minutes. In a large bowl, beat the eggs, coconut milk, and goat cheese. Add the smoked salmon, dill weed, smoked paprika, salt & pepper, and fold until well combined. Pour the mixture over the onions and cook over medium heat for 5 minutes. Then bake for 45-55 minutes (until a toothpick is placed in the center & comes out clean).
