Happy freakin’ Friday peeps! I’m sooo happy it’s Friday! It’s been a long week and I’m sooo looking forward to doing absolutely nothing tomorrow in anticipation of the blizzard New Jersey is supposed to get hit with. 

There are few things I don’t do in this life and driving in the snow is one of them.  I once drove home from Connecticut in the midst of a snow storm (not my brightest idea, I’ll give you that).. I saw things on the Merritt Parkway that scared the daylights out of me.. trucks were sliding off the road into ditches, it was complete white out, and the 3 hour trip, took me 10 hours and by the time I got home.. I’m pretty sure I acquired a permanent twitch! So, that was the end of my adventurous days of driving in the snow! ?

Anyhow, I’m going to have to come up with a home workout for tomorrow because I won’t be making it to my beloved Orange Theory.. bummer! And I suck at home workouts, so my friend Kristen will need to give me something because she’s awesome at coming up with kick a** workouts you can pretty much do anywhere with almost nothing! I’ll be sure to share it with all of you on Monday!

So aside from that, all of my weekend plans have been cancelled, moved, and rescheduled which means, I’ll be working hard all weekend on some really delicious recipes I’ll be delivering on the blog next week.  In fact, I’ll be doing a little food shopping tonight before Tyson and I decide to go on lockdown.  Thankfully, we also have a lot of catching up to do on GH.. we’re so behind, we’ve not even seen the Patrick departure as of yet! Ugh! And yes, Tyson watches it too! I swear.. ?

In the meantime, we’ll leave you with these yummy cups which are perfect for a comfy, cozy, snowed in weekend! ?

SEA SALTED SB&J CUPS

Prep Time: 20 minutes

Cook Time: 30 minutes

Total Time: 50 minutes

12 cups

Sea Salted Peanut Butter & Jelly Cups

Ingredients

  • 1 pound dark chocolate
  • 1/2 cup sun butter
  • 1/2 cup strawberry jam (recipe is on the blog)
  • course sea salt for garnish

Instructions

  • Place 12 muffin wrappers in a muffin tin. Melt the chocolate over medium heat in a double broiler. Place a tablespoon of chocolate in each wrapper. Using a paint brush, paint the sides of the wrapper with the chocolate. Place the trays in the freezer for 10 minutes. When the chocolate in the muffin cups is frozen, remove from the freezer. Place a layer of sun butter in the chocolate cup while smoothing it across the cup with a butter knife. Place in the freezer for 5 minutes then place a layer of strawberry jam in the cup. Smooth it across the cup using a butter knife then place in the freezer for another 5 minutes. Top with a tablespoon of chocolate, sprinkle with sea salt and place in the freezer for at least 10 minutes before serving.
