I don’t know about all of you, but I’m legit ready for summer.  I’m so ready to retire the puff coat and breakout the off the shoulder tops, I’ve been stocking up on.  If you haven’t already heard of the “liketoknow.it” app, you need to stop what you’re doing, and download it now.  It’s the greatest thing since sliced bread, we’ll it’s better than bread, cause bread’s not paleo!

But seriously you guys, this app is a game changer, let me tell you how it works.. you screenshot an outfit you like or a particular top, that one of the models (#liketoknowit) is wearing, and the app will give you the link to each website, where you can purchase the item.  Sound simple?? Wait, it gets better.. if you have a paypal account, you simply click that button to purchase the item.. you don’t even have to have your card handy or key your information in! How crazy is that??!! I’m now officially dangerous, armed with a screenshot, and a purpose!

Here’s an interesting fact about me, well.. maybe not interesting, but definitely true.  I hate mall shopping! I don’t like crowds, lines, or waiting for a parking space.  The idea of aimlessly trying outfits on, is as appealing to me as a root canal.  If I must enter a mall, as a last resort.. I’m in and out in under 20 – 30 minutes, it’s like the Amazing Race going down when I enter into Bloomies, and I don’t care if I have to park six miles away and walk, it beats sitting in a lane for 40 minutes with my blinker on, waiting for a spot.  Lucky for me, I am true to size, so online shopping is a complete cake walk.

Another plus, is that bloggers like paleomg, cmcoving, and dressupbuttercup not only model all the great clothing for you, but they give you tips like, these shoes run small, so order a half size down which I believe I just did when purchasing these Steve Madden slip on sneakers.  It’s like the easiest and coolest app ever! Don’t you just love technology??!!

So, I picked up a copy of “Wired to Eat” by Robb Wolf tonight.  In case you don’t know who Robb is, he is the author of “The Paleo Solution.” I highly recommend you pick up a copy of his latest book because he is a wealth of knowledge and he really does his research before delivering the facts.  I can’t wait to delve into it and take the 7 day carb test.  I’m a total carb addict.  Until I did the Whole30, carbs were like heroine for me.. And I have no idea why, but I keep using that word as of lately.

For a while I was doing well with my reading, but over the last few weeks, I’ve had so much work to do, I’ve not gotten as much reading time in, as I’d like too.  I’m also obsessed with Chicago PD, so I’ve been catching up on all five seasons, by watching an episode a night, and they always have such a kick ass ending, it takes all I have not to watch the next one, but starting tonight, I’m going to revert back to eight hours a sleep, and a little reading (no computer or TV on) before bedtime, and I find, reading with a dim light also helps me to relax.  Although my body gets tired, my mind never seems too. Ugh!

Anyway, speaking of warmer weather, my favorite dessert is, was, and will always be.. ice cream! And this flavor is ridiculously delicious.  It makes about six cups and I was rather annoyed with myself for eating two of them, but when I talked to my dad last night, he couldn’t resist the remaining four, so now I don’t feel so bad.  It’s incredibly delicious and so refreshing, and the dark chocolate.. let me just say, if you set out to have just a spoonful, your willpower will be put to the test!

Mint Green Tea Chocolate Chip Ice Cream

makes 6 cups


  • 1 – 13.5 full ounce can coconut cream
  • 1/2 cup coconut sugar
  • 1/4 cup vanilla casein powder
  • 1 tablespoon matcha powder
  • 1/2 teaspoon doterra peppermint oil
  • 1 teaspoon pure vanilla
  • 3.5 ounces dark chocolate (I use 85% cocoa)
  • 4 cups of ice


  • Place all the ingredients accept the chocolate in the Vitamix
  • Insert the tamper through the lid
  • Turn the machine on and slowly increase speed to Variable 10
  • Use the tamper to press the ingredients into the blades
  • Mounds of ice cream will form
  • Give the chocolate a rough chop
  • Place the ice cream in a mixing bowl and fold in the chocolate
  • Place the ice cream in the freezer until ready to serve

*Remove ice cream from freezer about 20 minutes before serving.
