Well TGIF Peepers! This was an off week for me, so I can’t say I’m not happy to put it behind me. I’m very much looking forward to sleeping in tomorrow morning. I feel a little drained as of lately. It may have something to do with the fact that we just celebrated Palm Sunday and there was so much cooking involved, and now we’ll be at it again on Sunday, for Easter.
Anyway, I think I’m seriously lacking in the sleep department which is not cool, and I’ve been pushing myself in the kitchen. Between holiday cooking, recipe testing for the blog, and meal prepping for RP Strength, I feel slightly exhausted. Btw, now that I seem to be on top of meal prepping for myself, something I usually suck at, I’m finding RP Strength a lot easier to adhere too. The results are undeniable, it’s just a little frustrating to reference a spreadsheet every time I need to eat, but I’m getting more and more used to it, and now that I found Paleo carbs that match the required grams needed at each particular meal, I’m totally stoked!
Speaking of RP Strength, you have the ability to replace your meals with a tasty shake as long as it includes the required amount of protein, leafy greens, sometimes carbs, and fat. So, I’ve been getting lots of opportunities to experiment with smoothies which I love because you can drink them, freeze them into ice pops, or overload your Vitamix with ice, and turn them into ice cream. In fact, tonight, I’m working on a cream-sickle smoothie that will be blog ready by next week.
So, let me tell you a little bit about this delicious mint green matcha smoothie, for starters, its incredibly refreshing. I love using doterra peppermint oil in everything from smoothies, to ice cream, to tea. It’s so versatile and so good for you. I probably drink this smoothie at least once a day and I’m bummed the second I finish it because it’s so incredibly yummy, I want more of it.
Mint Green Matcha Smoothie
makes 2 cups
- 1 scoop of vanilla whey protein powder
- 1 tablespoon matcha powder
- 1 tablespoon cocoa powder
- 1 packet stevia
- 1 tablespoon almond butter
- 3 drops doterra peppermint oil
- 2 handfuls of parsley, kale, or spinach
- 1 cup water
- handful of ice
- Place ingredients in a Vitamix or blender, and blend
*This smoothie can be made using almond milk or coconut milk in lieu of water, and you can use either spinach, kale, or parsley which is my favorite, and you can use chocolate whey instead of vanilla for a more chocolatey mint taste.
