Happy Tuesday Peeps! Big day today.. it’s hair day! That means, it’s time for my cousin Bianca to do my highlights, and give me what she calls, “a dusting” because I hate haircuts! I had a bad haircut, many years ago, which resulted in me having to get all of my hair cut off (it looked like Demi Moore in Ghost) and I freaked!

So ever since, I avoid haircuts like the plague! I once went two years without even so much as a trim because the whole experience is painful for me.  Inside, I’m screaming in the chair like a little kid.. on the outside, I just appear tense!

Anyway, Bianca refuses to listen to me whine about my hair not growing fast enough, so she makes me take Biotin and trims away against all of my protests! I guess I let her get away with it because she’s family and because I drive her insane with constantly changing the color of my hair.  It’s a wonder I still have any at all!

You see, I can’t make up my mind when it comes to hair color and every time I try something new or revert back to something old, I swear it’s going to be my forever color.  Then, 3 months later, I’m over it and ready for a change.

I’ve been red (current color), blonde, dirty blonde, black, brown, and then there’s the other colors I’ve sported in the past.. dark brown/blonde highlights, light brown/blonde highlights, dark brown/red highlights.. I honestly sported every color in the spectrum and I’ve done this at times, by changing from one extreme to the next, every ten weeks.  It’s a wonder Bianca is still putting up with me.

So, today I’m on the fence between keeping the red or switching back to light brown with blonde highlights??!! Red makes me feel edgy.  I was red when I got my first tattoo.. “Scream & Shout by Will.I.Am,”  was blaring in the parlor at the time and I was feeling very bad a**.  Plus, how many red heads do you know?? And I do like to be a little different.  Not everyone can pull off red.. ?

But, light brown with blonde highlights, always photographs so well.. Ugh! Decisions, decisions.. And I know “B” is going to give me that look with “hand on hip” like, “seriously??!!” You sat in this chair in November and swore you were keeping it red!!! I’m done with you..

What do you think peeps?? My skin tone is so light that the blonde may wash me out.. And the red is warm??

Ok, enough about my hair.  One thing we know for sure, no matter what I choose today, it will undoubtedly change in 10 to 12 weeks from now, so let’s talk about “The X-Files” and how bummed I am that I missed them last night!

Me & the bestie went to Arthur’s Steakhouse in Hoboken and that’s when I suddenly remembered, I forgot to record it. Ugh!!! I had a sick feeling all throughout dinner because that’s how obsessed I am with this show and have always been.  The good news is that it will be available on “on demand” so I think I might just pull through.. it was touch and go for a while, but there is light at the end of the tunnel.

So, “you know who” will be hauled up in front of the TV tonight, following Mulder & Scully closely while snacking on some celery & cream cheese.  I think you should all do the same peeps, so here’s a de-lish recipe that lets you consume yummy cream cheese without consuming actual cheese! That means no “adverse reactions.” Well, kudos to that.. ?

Prep Time: 5 minutes

Serving Size: 2 cups

Cream Cheese & Chives

You’ll need to soak the cashews overnight in water before making this recipe.

  • 2 cups raw cashew pieces, soaked in water overnight
  • 1 teaspoon sunflower oil
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon sea salt
  • 3 tablespoons olive oil
  • chives for garnish

  • Drain and rinse the cashews. Add them to the food processor along with all the other ingredients accept the chives. Pulse until a smooth consistency is reached. Place in a container in the fridge for a few, to firm up. Sprinkle on some chives and enjoy.

*Enjoy this with celery, on grain-free bread, when making fun paleo desserts like, cheesecake or simply alone!
