I think I eat more salad than anything else in the warmer months and I really love coming up with new ideas instead of always sticking with the traditional choices like ceaser or a wedge.  Don’t get me wrong, I love them too, but I’m always excited to try something new.

It seems, these days, kale is really on the rise.  From kale chips to kale smoothies and now I’m seeing kale salads.  It’s suddenly known as “the” superfood and it’s been popping up every where I go.

So, I decided to experiment with the green that seems to be getting all the attention these days, and in revamping my website, and pulling my recipes together, I suddenly realized.. I’ve never delivered a delicious salad recipe.

So I created this to satisfy my kale curiosity and to use two of my favorite fruits that are now in season.

I have to tell you that this combination blew my mind.



  • a bunch of kale
  • 2 jalapenos
  • 3 blood oranges
  • 2 black plums
  • 1 1/2 cups walnuts
  • 4 ounces goat cheese
  • 1 garlic clove, grated
  • 2 tablespoons olive oil
  • 1/4 cup fresh squeezed orange juice
  • 1 teaspoon honey
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper


  • Cut the ribbon portion of the stem and discard the stems. Rinse the kale, dry it, and place it in a large salad bowl. Hollow out the jalapenos and thinly slice them. Now sprinkle them over the kale. Now you want to dice up the black plums and sprinkle them over the Kale as well. Peel the blood oranges and add them too. Now give the walnuts a rough chop and add them in as well. Now add the goat cheese in small chunks. Juice the remaining blood orange and add your orange juice, olive oil, sea salt, black pepper, and honey. Now grate your garlic clove and add that to the dressing as well. Whisk the dressing together and pour over the salad.
