I feel like I’ve been run over, but in the best possible way! I had my first personal training session yesterday with Cyril Morris of “A Different Approach Fitness! About 5 minutes into our session.. I’m like, where have you been all my life?? Let me start by saying.. now I get it! I finally understand how beneficial strength training is.  I was legit sweating, 5 minutes into the workout, as if I’d run a couple of miles.  That’s the last time I show up without a towel! ?

Cyril had me working muscles in areas I didn’t think were possible to isolate and tone, but that’s why he’s the trainer and I’m the student! ? Many of you have heard me talk about Cyril’s classes at “Orange Theory” which I take 3 times a week, but after talking to my brother in law, it made sense to begin training personally with Cyril, a few times a week, in addition to OT.. to help me achieve my goals.  See, I have some pretty big fitness goals as of lately peeps, and I know I cannot achieve them without Cyril’s knowledge and guidance.

I’ll push myself to my limits in cardio at Orange Theory, but as you already know, strength training is my weakness, but that’s about to change because Cyril is clearly not going to let me slide or slack on anything from reps to form.

To me, Cyril is what every trainer should be.  I don’t have to be a pro to know when someone is a genius in their field.  I have a knack for honing in on “the best of the best!” I experienced the hardest workout of my life yesterday, and thanks to Cyril’s expertise, I walked out of it.. feeling like a brand new person who was ready to take on the world, and I woke up feeling “fit,” not sore or strained.
Anyway, I’m super excited about sampling & selling some tasty treats at OT, this Saturday! And these chocolate covered strawberries are sure to be a hit!

I decided to make some of these for my grandfather, who recently endured a brief hospital stay. Thankfully, he is home and getting stronger every day, but in the meantime, he’s not permitted to have sodium! ? Over the last few days, we’ve been checking everything for sodium, and I’m shocked to see that most desserts carry so many “milligrams” of it.
So, I decided to make gramps a dessert he could enjoy without sodium and I packed a little tin for him which I have no doubt, he’ll consume with his nightly tea tonight! Gramps is by far, my “fave” valentine this year!

I decided to make these 5 ways, but in reality, you can top them with whatever your heart desires! I went with unsweetened coconut sprinkles, chopped unsalted almonds, plain, bacon (because I’m bacon obsessed), and sea salt! Fyi, gramps will not be enjoying the bacon or sea salted ones! ?

And on another note, did anyone catch “The X-Files” this week?? I caught up on it last night.. I thought it was okay, but I’m curious as to what is going on or going to happen with this “William” storyline! I have so many unanswered questions.. When did they give William up?? Did he know Scully & Mulder as parents?? Why did Scully’s mom say what she said, when she briefly woke from the coma?? I was like, enough about “Trashman” who cares.. where is “Cigarette Man” and all the conspiracies and cover ups??!! Ugh! Only 2 episodes left! And when it’s over.. I’m going to cry! Chris Carter better deliver another movie or all be plagued with these unanswered questions for all of eternity!!! Okay, that’s a little dramatic, but you know what I mean peeps! ?

CHOCOLATE COVERED STRAWBERRIES FIVE WAYS

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Serving Size: 1 1/2 dozen

Chocolate Covered Strawberries Five Ways

Ingredients

  • 18 strawberries
  • 12 ounces dark chocolate or dairy free chocolate chips
  • 1 tablespoon unsweetened coconut flakes or sprinkles
  • 1/4 cup chopped almonds
  • 1 slice of bacon
  • 1 teaspoon sea salt

Instructions

  • Rinse the strawberries and pat them dry with a paper towel. Melt the chocolate over low heat in a double boiler while stirring continuously. Once the chocolate is completely melted, dip three quarters of the strawberry in the chocolate and sprinkle all sides, with your topping of choice. Set the strawberry aside on parchment paper. Once you’ve dipped all the strawberries, place them in the fridge for 5-10 minutes before serving.
