Happy Hump Day! You may be wondering why I’m dishing out so many recipes as of lately, with the likes of protein powder.. Yep, I bet you’re losing sleep over this, just dying for me to answer this question.. you spend your days pondering.  Ok peeps.. let me put an end to your suffering.. ?

Cyril (my trainer) has me on a strict diet, so in an effort to adhere to the diet, I’m trying to get creative with my breakfast while keeping in line with the concept that breakfast is meant to give me energy.  Most people will eat oatmeal, but as you already know.. oats cause inflammation, so we paleo folks shy away from them, but protein powder, nuts, almond butter, etc. are great sources of energy, and can easily be incorporated with breakfast.

I’ve noticed that while on Cyril’s diet.. I’m most full at breakfast, satisfied at lunch, and somewhat content after dinner.  Now that I’m back to working out 5 consecutive days a week, I can’t keep my eyes open past 10:00.  This is a good thing because this allows me to get 8 hours of sleep in and if I’m sleeping.. I’m not late night eating which is always a challenge for me.

I also have a new rule.. I don’t take my computer to bed with me! Last week, I decided to follow Mark Sisson’s “primal” advice and leave technology outside the bedroom.  This has really helped me to relax my mind and sleep better.

Although, I didn’t sleep too good last night because my 65 pound pit bull opted to sleep on my back.  So, I’m basically a zombie today.  Tyson isn’t clingy, so this was somewhat unusual for him, but never the less.. I feel a power nap coming on before tonight’s run. And btw.. will it ever warm up?? I’m growing increasingly impatient with this weather.

I want sun, fun, some beach time, and a little color on these gams! I want to ditch the coat and throw on some summer dresses! I want to take long hikes and feel sweaty.. I want to sit by the pool and catch up on the pile of books next to my bed, that I MUST finish.. And I want to grill, have cocktails next to the fire pit.. swim until the wee hours of the night.. I want, I want, I want..

I really want you to stop listening to my day dreaming rants and go make these yummy muffins because they’re super delicious and you won’t feel guilty after you eat them..

BANANA NUT MUFFINS

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

Serving Size: 6 muffins

Banana Nut Muffins

Ingredients

  • 2 scoops chocolate whey protein powder (64 grams)
  • 2 eggs
  • 1 banana, mashed
  • 2 tablespoons almond milk
  • 1/2 teaspoon sea salt
  • 1 teaspoon cinnamon
  • 1/3 cup walnuts, roughly chopped

Instructions

  • Preheat the oven to 250 degrees. Combine all of the ingredients in a mixing bowl. Using an electric mixer blend until batter is smooth and well combined. Pour into muffin wrappers in muffin tins. Bake for 20 minutes. Remove from oven and allow to cool before serving.
