Well it’s great to be back to blogging again, and now that I’m back, I must be a bit rusty because I was almost done with this entry, when I went to save it as a draft, and it suddenly disappeared. Ugh! Isn’t that the worst??!! Thankfully, this recipe is simple otherwise, I might consider pulling my hair out. On a serious note, I made this recipe months ago for cousin’s night, and I never got to post it because I tore my rotator cuff. I can say with absolute certainity, I’ve never been in so much pain in my entire life. Like roll around on the floor, call my mother and beg her to leave work, kind of pain. It was awful! Not only did I tear my rotator cuff, but I nearly herniated a disk in my neck to boot. Thankfully, when the swelling went down, it was confirmed that I only wrenched the muscle so severly, it twisted in two different locations.
Yup, I really did a number on myself, but the good news is, I’m completely healed, and because the tear was small, I did not have to have surgery. I can’t even begin to express my relief. When the doctor first talked to me about the recovery time involved in surgery, I had traumatic images flash through my brain, of me having to move back in with my parents for the summer because I would have zero mobility and a certain pit bull to care for, but THANKFULLY, it never came to that.
It’s a strange thing to suddenly not be able to lift a cup of coffee or not be able to lift your arm to blow dry your hair. My hair became the running joke in the doctor’s office because it took every ounce of strength I had, just to twist it in a wet bun, to show up for my PT appointments. Most people want mobility back so they can lift their kids again or get back in the gym, all I wanted was to be able to blow out my hair. I was like “doc, please, my dating life is hopping in the summer, I cannot spend the summer hunched over, in a sling with wet hair! This just can’t happen to me!” Thankfully, he did put me back together, and gradually, the strength in my arm did return.
So, enough about that, lets talk about this delicious salad. For starters, have you tasted Tessemae’s Creamy Ranch Dressing?? Because it is to die for! It transcends just about anything you dip into it, and I love it! So I pulled together this salad at the last minute, and it ended up being incredibly yummy, probably because all of the ingredients in it are yummy, and then, I had the bright idea to toss No Crumbs Left, marinated onions in there which gave it a real kick. God, I love those onions! They remind me of the onions on an Italian sub, if you ever had a real Italian sub from a real Italian deli, you know exactly what I’m talking about.. Oh how the vinegar would soften the bread.. Ok, we shouldn’t talk about bread because we don’t eat bread anymore, or at least I don’t eat bread anymore, but these onions are everything, they are life!
You can add anything you like to this salad. It pairs really well with just about anything, in case you want to add some grilled shrimp, chicken, salmon or steak.. it’s an easy peasey pleaser! And for a real twist, it’s the bomb when you toss a few sardines in it.. just saying 😉
Apple Bacon Kale Simple Summer Salad with Tessemae's Creamy Ranch, and Marinated Onions
- 4 cups raw kale
- 3 hard boiled eggs, sliced
- 3 slices of bacon, roughly chopped
- 1 apple, diced
- 1/2 cup of walnuts, chopped
- 1 bottle Tessemae’s Creamy Ranch Dressing (add as little or as much as you like)
- 1 marinated onion using No Crumbs Left recipe. Click the link below.
- Preheat the oven to 400 degrees.
- Place bacon on a wire rack, on top of a baking sheet, and bake until desired crispiness is reached.
- Hard boil the eggs for about 12 minutes, then transfer them to an ice bath. This will make it easier to peel them later on.
- Place the kale in a salad bowl. Add the apple, walnuts, bacon, and onions.
- Remove the eggs from the ice water, peel, and slice them. Then place them in the salad as well.
- Pour the dressing over the salad, and toss until everything is well coated.
